Well I know in photoshop you just can create a layer with a transparent background and the text on it. I would be able to do it in Photostudio (basic software that came with my canon p&s) by basically doing the same thing.

I have noticed that a lot of people sign or watermark their photos on this site and I was just wondering why? I am guessing to protect your copyright? If so at what point did you start using it and do you add it to every photo you post?
